For example, if I have two exchange severs in the same administrative group and if I use the move replica option on exchange server #1, will it move everything (contents and hierarchies) to exchange server #2 and then remove everything on exchange server #1? Thanks

If you have a lot of content I would advise against using that option. It will flood the network. If you are migrating from one server to the other then I would replicate the content so that it appears on both servers at the same time, then remove the old server from the list of replicas once the mailboxes have been moved. You cannot really move the public folders in bulk and expect Outlook to continue to work.
