I use a Mcafee 3200 device as my SMTP gateway (currently Ex2000 mail system). In planning my transition to Ex2007, I am not sure what type of authentication to choose when I create the send connector to the 3200.

Can anyone explain this further?

Do you use any Authentication to the Mcafee device for Exchange 2000?

If not than you dont need one in Exchange 2007 either and simply set up a Send connector that forwards all mail to smarthost....where the smarthost is your mcafee device.
