I just installed Exchange 2007 into an existing Exchange 2003 environment.  There are only 2 servers, the new 2007 and the old 2003.  I moved a mailbox from 2003 to 2007 and began testing.  Mail flow works internally.  External mail to 2007 mailboxes works.  Outgoing mail from 2007 mailboxes does not work and gets stuck on the 2007 queue.  I am using the default SMTP virtual server on 2003.  There is no send connector defined in 2007.  I want to route outbound mail from 2007 through the 2003 server to the internet.  Do I need to create an smtp connector on the 2003 server then add it to 2007?

Seeing as how you will most likely continue forward with the 2007 vice the 2003, I would create a send connector on the 2007 side and then disable/delete all VSI connectors and domain definitions on the 2003 side.

I currently route all mail through my 2003 server in the manner you specify.

To do this I needed a Send Connector on the 2007 server who's "Source Server" tab lists the Exchange 2003 server.

On the Exchange 2003 server I have two routing connectors,  one that routes to the Internet Address space of '*' and another 2003 to 2007 (server to server)connector that lists the 2007 server under the remote bridgehead tab.

I will eventually change it to route through the 2007 server, but for now, it still flows through the 2003 server.

I am still struggling with getting mailboxes to move (most likely a permissions problem) from 2003 to 2007 if you happen to have any insight on this.
