Have a parent domain and a child domain. Parent domain has Exchange 2007. Child domain currently doesn't have any email.

Is it possible for the parent domain Exch 2007 to host the email for the child domain as well as it's own instead of buying a dedicated Exchange Server for the child? How would the child domain know where it's Exchange server is?

My first proposal was to have the child domain buy their own server but my manager is asking why they can't just go on ours and I cant' find any information indicating either way.

An Exchange 2007 box can host email for anywhere in the entire forest, it doesn't even need to be in the same tree of domains.
It is incorrect advice for them to have their own server if yours has the spare capacity to host theirs.
You need to prep their domain so that they can create mailboxes. All of that is in the Exchange online help. It's a simple command to run from the CLI and then you're good to mailbox enable them.
