Is it in any way possible to route mails from a specific sender (or sender domain) to a specific send connector, so that you get (almost) the same functionality as when using connector restrictions /security groups in an Exchange 2003 environment?

There is no Exchange 2007 transportrule there can move a message to a specific send connector.

Depending upon whether the sender is internal or external, have you checked the Internal relay domain and External relay domain options in Exchange 2007?
