yet another recive connector question.

I have read posts but need some clarification.

I have a new 2007 server with the default 2 recieve connectors.
I also have several systems that send mail for backup/alerts/etc from NON windows boxes.  I need to allow these to realy into exchange.

Can I modify my non client connector and add the IP/Masks to relay in? 
Or do I have to create a new connector and allow anonymous?
also what is the 0.0.0.0-255.255.255.255 is that EVERYTHING?
