Is there a way to track and view the following
1. Messages sent per day  - Average if possible
2. Messages received per day - Average if possible
3. Average message size of messages sent

Can that be easily determined?

You could use Microsoft's Log Parser tool to analysis the message tracking logs on the Hub Transport server to get any statistics you require.

To get this to work on Exchange 2003, I first need to turn on SMTP protocol logging, right?

Message tracking will give you the raw information.
Then you just need something to process the logs.
There are many third party utilities that can do that for you. Quest Message Stats is the best, but is also very expensive. You could also look at PromoDag, Mail Detective and a few others.

Message tracking is different from SMTP Protocol logging. You can find the message tracking logs in

C:\Program Files\Microsoft\Exchange Server\TransportRoles\Logs\MessageTracking

You can view them in Notepad or Excel. LogParser is free, but need some time to develop some scripts to generate the info required.
