I work for a small company who isn't keen on spending a lot of money. We have a web server running windows 2008 webserver edition in a dmz, is it possible to install the exchange edge transport on the 2008 webserver OS? Would security be an issue?

You can't install Exchange 2007 on the web editions. You need the full Standard edition. Although you could save yourself some money and not have an Edge server at all. It isn't mandatory. I can do almost everything that Edge can do using third party tools for less than the cost of another Exchange 2007 license. Personally I think Edge is a waste of space. If it supported OWA and other other web services then it would be useful. As it only does SMTP it is pretty pants.

If you want an alternative tool, then look at Vamsoft ORF.
