In my current environment, I have setup:
ISP -> Sonicwall Firewall -> Exchange Server 2007 running all roles.

I am looking to setup a second server with Exchange Server 2010 to start migrating mailboxes over to once RIM updates their software to be able to handle mailboxes in 2010.  In order to prepare for this, I would like to also add an Edge server at the perimeter so that both Exchange servers will be behind it and it should make things run a bit smoother (eventually the 2007 server will be upgraded to 2010 once all mailboxes are moved off to help load balance).

Is there any known issues with having a 2008 R2 server running Exchange 2010 Edge Role when you have a 2007 server running mailbox/hub etc?

i don't see any issue.

You can install it. Moreover you can try Exchange Deployment tool assistant (not yet tried but might be helpful for you)
