I have tried to do an install of 2010 in our existing 2007 enviroment. I initially only put the client access and mailbox roles on 2010. But when I am in Server configuration > Hub Transport there are no hub transport servers and it says that there are none in our organization.

Could there be any possible causes for this?

You cannot use the Exchange 2010 tools to manage Exchange 2007.

Sorry, maybe I wasn't clear.
The 2010 tools can only recognise 2010 server roles therefore if your using 2010 you need to install the 2010 HT role

Okay thats helpful to know, I thought all servers showing the role would appear. I have moved a user over to the 2010 mailbox, and they are able to access the 2010 owa and all email is able to be recived. I have installed the hub transport role on 2010 now. And my test user is able to recive email but any email sent from that user gets stuck in the 2010 server. Are tehre any suggestions as to how to diagnose as why email is not even able to move around externally?

Can you just clarify.

Your Exchange 2010 user is able to receive e-mails OK?

When they send internally what happens?
When they send Externally what happens?

How is your Send Connector on the Exchange 2010 server setup?

My user who is has the database on 2010 and accessing owa on 2010 is able to recive emails okay.

When I send email both internally and externally I get no errors and the message appears in sent items. However the email is not delivered.

In the Exchange management Console under tools can you open the queue viewer, do you see any messages in the queues?

If so what does the queue status say?

I have 15 objects in the queue

The status for the emails says 'Ready' and the Last Error says '400 4.4.7 message delayed' on the older test emails but is blank on the ones sent today

The internal emails are in the hub version 8 'Next hop domain' and external are in 'Internet smtp connector'
Both internal and external mail are being queued
