Hi,

Our Helpdesk want to have all incoming mail as plain text to one specific mailbox. Reason is that they want all pictures as attachment instead of having the picture in the message body. How do I solve this for them? It's just one mailbox that this should effect!

I dont that this can be forced using MAPI on exchange per an individual account but I could be wrong (server side)

I know this can be done on an individual mailbox if your are using POP or IMAP.   You can go to the properties of the mailbox in the EMC and click the "Mailbox Features" option, then edit the properties of IMAP or POP and you will have the option to specify the MIME Format.
