2010 installation scenario...valid?

This is somewhere between an installation and migration scenario...
I currently have a pair of 2007 mailbox servers set up as a CCR cluster. They are running on Windows 2008 x64.

Beyond building a new CAS...as far as migrating these, tell me if this will work:

Remove Exchange from the passive node, evict it from the cluster.
Upgrade the OS from Windows 2008 to R2.
Install Exchange 2010.
Migrate the mailboxes over from the 2007 server.
Do the same thing to the other server, remove Exchange and upgrade the OS and reinstall 2010.
Build a DAG for my redundancy.

What do you think? That sounds pretty straightforward and minimal downtime....

Sounds like a do-able scenario but still a bit risky if anything fails during the migration! How about leaving the CCR cluster as it is. Install a virtual machine running Exchange 2010. Move all mailboxes to the new 2010 server. Properly decomission the CCR cluster and re-use the servers to setup 2 Exchange 2010 servers configured in a DAG. Create mailbox databases on both servers and move the mailboxes from the standalone VM to the physical servers while using both as active servers and having the databases replicated between each other.

Definitely crossed my mind. The problem I'm facing (as is the case with all admins I'm sure) is temporary storage....I've got a decent VM environment set up, but I don't have anything big enough to temporarily hold a few hundred gigs of mail...so I'm stuck in a quandry with this....
