Hi
I have a client who wants to receive a copy of everyone's email in his company, into one mailbox.
Is there an easy way to do this in Exchange?

Yes it can be done. You need to enable journalling on all the mailbox databases. Basically any email that is sent or received from each mailbox database, a copy will be sent to a journal mailbox that you specify.
