Delete after 30 days (bb and iphone)?

Hello all.
Since we are using my mailboxes on several different devices (ipad, bberry, iphone) we're evaluating the possibility to switch from a standard pop access to hosted exchange for some accounts.
I have some newbie questions:

1) what happens when a blackberry (or another device) automatically deletes email from the device after 30 days? I would like to delete messages from the device, but keep them on the server.
2) How can I remove the messages from the server, but keep them on outlook?
3) At the end of every year I use to moe all my messages to a new PST (2010, 2011) etc... how can I handle this with Exchange?

You cannot delete messages from blacberry message box, and yet retain them on server. The reason is the blackberry message box is reading the messages from the server itself, and is not separately copying and storing them in phone.
