Which server name am I supposed to enter when I configure my outlook with Exchange server 2007?

You should connect to your Client Access Server, CAS.

Mailbox Server Name if you are configuring Outlook 2003 and for 2007 and 2010 CAS Server.

No, the RCP endpoint rest withing the CAS role regardless of client version.

Come to think of it, I was wrong. I was totally thinking Exchange 2010 and your was Exchange 2007 so the answer for you is: The Mailbox Server Name.

Sorry for the confusion.
