Floobie -> Azure Solution for Exchange 2007 Transport? (15.Aug.2012 1:41:59 PM)

We currently have an Exchange 2007 server which exists solely to process incoming EMail, extract the attached files (via a transport), and spit those files to another server (basically we take the JPGs and save them as files to another system).
In our preparation for migrating to Azure, we found out there's no way to migrate our 2007 exchange setup to a VM (at least that's what MS has told us). So the question is - what other solutions exist?
Note I'm inheriting this system (I did not build it - I'm handling the migration, etc).
I would think there'd be some lightweight SMTP processing app we could install on a VM (that's not exchange) which could easily accomplish the same thing.
Any recommendations?
