I have sucessfully migrated all users from exchange 2003 to exchange 2007. Now need to remove last exchange 2003.
Already done following task.

Offline Address Book.
Free busy Scheduled.
Public Folder replica.

Need more help on above task and post un-installation steps.

I think that for removing the Exchange 2003 Server after migrating in all the mailboxes to the Exchange 2007 you can refer to this:
