I'm migrating from 2010 to 2016 and was curious if the:

Get-Mailbox -Arbitration | New-MoveRequest -TargetDatabase myNewDB

Would actually MOVE the data over from my existing 2010 server, or simply copy it over to my new 2016?

The 2010 is currently actually doing all of our email, I'm trying to build a 2016 to replace it but I cant disrupt it until the 2016 is completely done (usually on a weekend)

When you perform New-MoveRequest two things happens:
1. This is really move data to another server and another DB
2. AD attributes changes in AD as well for system accounts (for arbitration)

And do not de-install Exchange 2010 - just perform week of silence, shutdown it for a week, and check. If all works fine you will decommission this server.
