Routing all internet email through one SMTP connection

Situation is as follows.

I have 4 E2k3 Servers, one in Sydney (main server) Melbourne, Hobart
and Auckland. They are all in the one Administrative group and all
have their own routing group, each routing group connector is
connected back to the main Sydney routing group. I want to do the
following;

I want all internal and external email to go to/from the Sydney server
and then sent to the respective remote site. This is for virus and
spam protection. MX records get forwarded to the Sydney server, so
there is no problem there. But how do I force outbound email to go
through the Sydney E2k3 server.

On each Exchange server you specify the Sydney server as smart host in the connector properties.
