Message format in Public Folders

We currently have 4 web enabled folders which are Brochure,Bookings,Information and Hotels.
When a customer fills up a form on our website it would send the information to the appropriate folder from it's corresponding webpage.
When the message arrives in the bookings,information and Hotels folder they are in HTML format while any e-mails that come to the Brochure folder is in text format.We tried re-routing the e-mails from the website form to a hotmail account and it appeared in HTML format. Not sure why only this folder is causing e-mails to be displayed in HTML format.

Any ideas's....
