I must have read thousands of pages of information, but nothing seems to be making enough sense about backup and restore. I would like to know what would be the best and easy way to backup/restore Windows 2000 AD server which also had Exchange 2000 server in case of a disaster ?

Kept down to brass tacks it's pretty simple.
Create three backup jobs.
1. The drive letters
2. The system State
3. The Exchange
Use NTBACKUP as it's free.
When you want to restore the box you install a copy of Windows into the same directory structure as it is now. Then restore the System State. Then install Exchange with the /disasterrecovery switch. Then restore the Exchange Server. Finally restore the log files.
OK, so a 12 line procedure hardly does justice to the actual steps but there isn't a massive amount of reading you need to restore a simple, single server environment.
See www.microsoft.com/exchange for the Disaster Recovery white paper which contains pretty much all you'll need.
