I am considering moving from a UNIX mail server to exchange. I had read a while back that exchange lost stability with more than about 500 users. Will I be able to support 2000-3000 users ?

hmm, I have never heard about reliabilty issues with only 500 users. Exchange is good for at least 10K users. It's a simple database designed for messaging.
