If I change the password of the account I used to create my Exchange 2000 organization, will I break anything?

I am all Exchange 2000. The service accounts all seem to start with localsystem accounts...

No, you won't break anything as long as all Exchange services run as system (at least don't run as that particular user). If you do have services that run as that account you have to change the password settings for each and every service in order to store the new password.
