I am certain my exchange 2000 server is being used as a relay to send spam and, possibly, spread viruses. Anybody know how I can check/stop this?

There are many options..

You can work on setting up the Exchange AntiRelay settings in the Internet Mail Connector (SMTP Config).

You can put something in front of your Exchange system to handle the emails and dump the spam and delete relay attempted emails.
