Could you tell us where you want to migrate to, on what version of Exchange and OS?
More detail needed.

Talk to your EMC SE. Moving between platforms is as easy as creating a new database on the server and putting it on the EMC LUNs. Then do mailbox moves from one to the other. That's the non disruptive way.
The disruptive way is to present the EMC LUNs and then do database move (right click on the database in the Exchange Management Console and Properties. Then browse to the new location.

However, your EMC guy will make sure that you do the right steps so that the servers can temporarily be connected to both storage systems. You may have conflicts between PowerPath and whatever garbage that HP nonsense has installed to manage the HBAs.

The creating of new databases and moving of mailboxes will only disrupt email for that one mailbox for however long it takes to move. Everyone else will be working ok until it's their turn to have their mailbox moved.

Again, your EMC SE will help you through the LUN issue. You might have to install a new HBA so that you are not connecting to two separate systems. It's all about the management software, multipathing etc.

If you can connect up and present LUNs from EMC and HP at the same time then you're all ok, you can do the mailbox move method. It will just take time is all.

Talk to your EMC SE, that's what you're paying a ton of money to do. He will give you the most current best practices document.

You are asking for a lot of work, just do the mailbox moves...
