I've read in multiple posts on different websites that Exchange 2010's deafult sending behavior is to send email from the primary email address on an account regardless of if I change the "from" field to a secondary SMTP account which is setup on the same user. I've tested this to be true but I'm unable to find documentation on it from Microsoft. Can anyone help with a technet link, etc?

As far as I know it is not mentioned in MS docs.
Why do you need it? The documentation can not cover all aspects. Did you try to test Exchange behavior yourself?
