Is it possible to send and email addressed as follows?

joe@288.888.888.80

Instead of joe@joes.com???

mail must be sent and be able to resolve as an MX record, so unfortunatly, unlike websites which can be resolved by ip address, its not possible with mail to my knowledge.

You are correct. It all comes down to the MX (mail exchanger) record in DNS.

Actually you can. You don't even have to have an MX record to receive mail. Only if the mail host is different from the resolved host in DNS. I am not sure how to properly set this up in Exchange as I am rather new to exchange but I have used this setup in linux, by setting up DNS and destination domains properly. I believe the correct email format is joe@[xxx.xxx.xxx.xxx] if I remember correctly. Hope this helps.
